Coca-Cola Cupcakes with Salted Peanut Butter Frosting
Ingredients:
- 1 cup Coca-Cola
- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup buttermilk
- 1 tsp vanilla extract
Instructions:
Warm up the oven to 350F 175C and put paper liners in a cupcake pan
Put Coca-Cola, butter, and cocoa powder in a saucepan and mix them together
While stirring, heat over medium heat until the butter melts and the mixture is smooth
Take it off the heat and let it cool down for a while
Mix the flour, baking soda, salt, and sugar in a large bowl with a whisk
Mix the eggs, buttermilk, and vanilla extract in a different bowl
Mix the dry ingredients with the Coca-Cola mixture, then pour it in and stir it in well
After that, add the egg mix and mix it in until the batter is smooth
Fill each cupcake liner about two thirds of the way to the top with batter
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
After taking the cupcakes out of the oven, let them cool in the pan for a few minutes
Then, move them to a wire rack to finish cooling
Make the Salted Peanut Butter Frosting while the cupcakes cool
Spread the Salted Peanut Butter Frosting on the cupcakes once they are completely cool
Serve and have fun
