Sweet Potato Veggie Burgers
Ingredients:
- 2 medium sweet potatoes, peeled and grated
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 whole wheat burger buns
- Toppings of your choice lettuce, tomato, avocado, etc
Instructions:
Turn on your oven and heat it up to 375F 190C
Grate the sweet potatoes and mix them with the black beans, breadcrumbs, red onion, cilantro, cumin, chili powder, salt, and pepper in a large bowl
Mix everything together well
Make 4 patties of the same size out of the mixture
Put the patties on a baking sheet that has been lined with parchment paper
Bake for 25 to 30 minutes, flipping the patties over halfway through, until they are firm and cooked all the way through
Set the whole wheat burger buns on toast in the oven for a few minutes until they get a little crispy while the patties are baking
After the patties are done, put your burgers together on the toasted buns with the toppings of your choice
Your Sweet Potato Veggie Burgers will taste great when theyre hot
