Raspberry Granita Ice Cream
Ingredients:
- 2 cups fresh raspberries
- 1 cup sugar
- 1/2 cup water
- 2 cups heavy cream
- 1 teaspoon vanilla extract
Instructions:
Put raspberries, sugar, and water in a saucepan and mix them together
Over medium-low heat, bring to a simmer and stir every now and then until the sugar is gone
Once it starts to simmer, keep cooking for another 5 to 7 minutes, until the raspberries break down and the mixture gets a little thicker
Leave it alone until its cool enough to touch
Put the raspberry mixture through a fine-mesh sieve into a clean bowl
Press down on the solids to get as much liquid out as you can
Throw away solids
Add the vanilla extract and heavy cream to the raspberry syrup and mix them well with a whisk
It is best to put the mixture in a shallow dish or pan and freeze it
Every 30 minutes, use a fork to stir the mixture and break up any ice crystals that form
In this way, the mixture will stay frozen for about three to four hours, or until it turns into granules
Once the granita ice cream is frozen, put it in bowls or cones and serve right away
