Patriotic Vegan Cupcakes

These vegan cupcakes are very patriotic and would be great for any holiday or celebration. They are beautiful to look at and taste great, with layers of red, white, and blue. Plus, they are vegan in every way

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup almond milk
  • 1/3 cup vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • Vegan red and blue food coloring
  • Vegan frosting of choice
  • Vegan sprinkles for decoration

Instructions:

Warm up the oven to 350F 175C and put cupcake liners in a pan

Whisk the flour, sugar, cocoa powder, baking soda, and salt together in a large bowl

On top of the dry ingredients, add the vinegar, vanilla extract, almond milk, and vegetable oil

Mix everything together well

Split the batter in three equal parts

One part should stay plain

Use vegan food coloring to make one part red and the other part blue

Put the batter in the cupcake liners in this order: plain batter first, then red batter, and finally blue batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

Let the cupcakes cool all the way down before you frost them

After the cupcakes have cooled, use your favorite vegan frosting to cover them and add vegan sprinkles to make them look nice
