Zucchini Nacho Chips
Instead of regular nachos, try these zucchini nacho chips, which are low in carbs and good for people on the keto diet. They taste great and are great for snacks or as an appetizer.
Ingredients:
- 2 medium zucchinis, sliced into thin rounds
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup diced avocado
- 1/4 cup sour cream
- 2 tablespoons chopped fresh cilantro
Instructions:
Preheat oven to 375F 190C
In a large bowl, toss zucchini rounds with olive oil, garlic powder, chili powder, paprika, salt, and pepper until evenly coated
Spread the zucchini rounds in a single layer on a baking sheet lined with parchment paper
Bake for 15-20 minutes or until the zucchini rounds are crisp and golden brown around the edges
Remove from the oven and sprinkle shredded cheddar cheese over the zucchini rounds
Return to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly
Remove from the oven and top with diced tomatoes, sliced black olives, diced avocado, sour cream, and chopped fresh cilantro
Serve immediately and enjoy
