Pinto Bean Skillet Bake with Spicy Sunflower Oat Topping

This vegan Pinto Bean Skillet Bake with Spicy Sunflower Oat Topping is hearty and tasty, and its great for a cozy dinner. The fragrant spices are mixed into the creamy pinto beans, and on top are oats, sunflower seeds, and more spices.

Ingredients:

  • 2 cups cooked pinto beans
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeo pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • 1/2 cup rolled oats
  • 1/4 cup sunflower seeds
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil

Instructions:

Preheat the oven to 375F 190C

In a skillet, heat olive oil over medium heat

Add onion, garlic, bell pepper, and jalapeo

Cook until softened

Add cumin, paprika, and chili powder

Stir well

Add cooked pinto beans and diced tomatoes

Season with salt and pepper

Cook for 5 minutes

In a small bowl, combine rolled oats, sunflower seeds, nutritional yeast, garlic powder, onion powder, and cayenne pepper

Transfer the bean mixture into a baking dish

Sprinkle the oat mixture evenly over the top

Bake in the preheated oven for 20-25 minutes, until the topping is golden brown

Serve hot and enjoy
