Chocolate Peppermint Bark Cookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1/2 cup crushed peppermint candy canes
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together the flour, cocoa powder, baking soda, and salt
Set aside
In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Stir in the chocolate chips and crushed peppermint candy canes
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart
Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still slightly soft
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
