Quick Gnocchi with Asparagus and Mushrooms

For a tasty weeknight meal, this quick and easy recipe pairs pillowy gnocchi with fresh asparagus and earthy mushrooms. Its a great dish for both vegetarians and people who love gnocchi because the flavors go so well together.

Ingredients:

  • 1 lb store-bought gnocchi
  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions:

Bring a large pot of salted water to a boil

Cook gnocchi according to package instructions

Drain and set aside

In a large skillet, heat olive oil over medium-high heat

Add minced garlic and cook until fragrant, about 1 minute

Add sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-7 minutes

Add asparagus pieces to the skillet and cook until tender-crisp, about 3-5 minutes

Season the vegetables with salt and pepper to taste

Add the cooked gnocchi to the skillet and toss everything together until heated through

Serve hot with grated Parmesan cheese on top
