Pressure Cooker Shrimp Boil
A quick and easy Pressure Cooker Shrimp Boil that captures all the flavors of a traditional seafood boil in a fraction of the time. Perfect for a weeknight dinner or entertaining guests.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 lb baby potatoes, halved
- 4 ears corn on the cob, cut into thirds
- 1 lb smoked sausage, sliced
- 1 onion, quartered
- 4 cloves garlic, minced
- 1 lemon, sliced
- 4 bay leaves
- 1/4 cup Old Bay seasoning
- 1 tsp cayenne pepper optional
- 4 cups chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Put shrimp, potatoes, corn, sausage, onion, garlic, lemon slices, bay leaves, Old Bay seasoning, cayenne pepper, and shrimp in the pressure cooker
Add the chicken broth and season with pepper and salt
Pressure cook for 5 minutes at high pressure with the lid closed
When youre done, quickly let go of the pressure
Open the lid slowly and take out the bay leaves
Put the shrimp boil in a big bowl and top it with fresh parsley
