Paleo Balsamic Crockpot Chicken
This Paleo Balsamic Crockpot Chicken is easy to make and tastes great. Its perfect for a busy weeknight. Adding balsamic vinegar, olive oil, and herbs to the chicken gives it great flavors, and cooking it slowly keeps it moist and tender. With the vegetables added, its a full meal in one pot.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 cup cherry tomatoes, halved
Instructions:
In a bowl, mix balsamic vinegar, olive oil, garlic, oregano, basil, salt, and pepper
Place chicken breasts in the slow cooker
Pour the balsamic mixture over the chicken
Add onion, bell pepper, and cherry tomatoes on top
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender
Serve hot and enjoy
