Italian Chicken Kabobs
These Italian chicken kabobs are a colorful and tasty dish that can be served at any time. Chunks of tender chicken breast are marinated in olive oil, garlic, and herbs. The chicken is then skewered with colorful vegetables and baked until its done. This is a simple and tasty way to get a taste of Italy
Ingredients:
- 1 lb chicken breast, cut into chunks
- 1 bell pepper, diced
- 1 onion, diced
- 1 zucchini, sliced
- 8 cherry tomatoes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
Preheat oven to 400F 200C
In a bowl, combine olive oil, minced garlic, oregano, basil, salt, and pepper
Add chicken chunks to the bowl and toss to coat evenly with the marinade
Thread chicken, bell pepper, onion, zucchini, and cherry tomatoes onto skewers
Place the assembled skewers on a baking sheet lined with parchment paper
Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through and vegetables are tender, turning halfway through
Serve hot, optionally with a side of rice or salad
