Creamy Beetroot Houmous
Creamy Beetroot Houmous is a vibrant and flavorful twist on traditional hummus. The addition of beetroot not only adds a beautiful color but also a subtle earthy sweetness. Its a healthy and delicious dip thats perfect for parties or as a nutritious snack.
Ingredients:
- 1 cup canned chickpeas, drained and rinsed
- 1/2 cup cooked beetroot, chopped
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
- Water as needed for consistency
- Fresh parsley, for garnish
Instructions:
In a food processor, combine the chickpeas, cooked beetroot, tahini, olive oil, minced garlic, lemon juice, and cumin powder
Process the mixture until it becomes smooth and creamy
You may need to scrape down the sides of the bowl and add a little water to achieve the desired consistency
Season the creamy beetroot houmous with salt and pepper to taste
Adjust the flavors as needed by adding more lemon juice or olive oil if desired
Transfer the houmous to a serving bowl and garnish with fresh parsley
Serve with pita bread, crackers, or fresh vegetables for dipping
