Blackberry Swirl Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup blackberries, fresh or frozen
- 2 tablespoons lemon juice
- 1/4 cup powdered sugar
Instructions:
Mix heavy cream, milk, granulated sugar, and vanilla extract in a bowl until the sugar is completely mixed in
Put the mixture into an ice cream maker and churn it according to the machines directions until its the consistency of soft serve
Prepare the blackberry swirl while the ice cream is being made
Put blackberries, lemon juice, and powdered sugar in a saucepan and mix them together
Over medium heat, stir the mixture every now and then for about 8 to 10 minutes, or until the blackberries break down and the sauce gets thicker
Take it off the heat and let it cool down
Once the ice cream is the consistency you want, put half of it in a container that can go in the freezer
Put half of the blackberry swirl on top of the ice cream
Do it again with the rest of the blackberry swirl and ice cream
To make the ice cream look like marble, slowly swirl the blackberry mixture into it with a knife or skewer
The ice cream should be frozen for at least 4 hours, or until it is firm
Enjoy the blackberry swirl ice cream that has been scooped into bowls or cones
