Thin Mint Macaroon Low Carb Cookies - Gluten Free
With a keto twist, you can still enjoy the classic taste of Thin Mint cookies. You can satisfy your sweet tooth on this gluten-free low-carb macaroon cookie while still following the keto diet.
Ingredients:
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol or preferred keto-friendly sweetener
- 1/4 teaspoon salt
- 1/4 teaspoon peppermint extract
- 1 large egg white
- 2 tablespoons melted coconut oil
- 1/4 cup unsweetened shredded coconut
- 1/4 cup sugar-free chocolate chips
Instructions:
Warm the oven up to 325F 160C and put parchment paper on a baking sheet
Add cocoa powder, salt, and powdered erythritol to a bowl and mix them together
Mix the egg white, peppermint extract, and melted coconut oil into the dry ingredients until everything is well mixed together
Add the sugar-free chocolate chips and coconut shreds
Spread out tablespoon-sized pieces of the dough on the baking sheet that has been prepared
Make each cookie a little flatter with the back of a spoon
Put it in the oven for 12 to 15 minutes, or until the edges are set
Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way
