Strawberry Key Lime Margarita Greek Yogurt Ice Pops
For a cool summer treat, these vegan ice pops taste like a mix of strawberry, key lime, and a little tequila. Theyre great for keeping cool at a barbecue or by the pool in the summer.
Ingredients:
- 1 cup vegan Greek yogurt
- 1 cup strawberries, hulled and sliced
- 1/4 cup lime juice
- 2 tablespoons agave syrup or maple syrup
- 1 tablespoon key lime zest
- 1/4 cup tequila optional
- 2 tablespoons triple sec optional
Instructions:
In a blender, combine vegan Greek yogurt, strawberries, lime juice, agave syrup, key lime zest, tequila if using, and triple sec if using
Blend until smooth
Pour the mixture into ice pop molds, leaving a little space at the top for expansion
Insert ice pop sticks into the molds and freeze for at least 4-6 hours, or until completely frozen
Once frozen, run warm water over the molds for a few seconds to help release the ice pops
