Keto Key Lime Pudding

Ingredients:

- 5 oz full-fat coconut milk
- 1/2 cup fresh lime juice
- Zest of 2 limes
- 1/4 cup powdered erythritol
- 2 tbsp coconut flour
- 1 tsp vanilla extract
- Pinch of salt
- Optional: lime slices and mint leaves for garnish
Instructions:
In a saucepan, whisk together coconut milk, lime juice, lime zest, erythritol, coconut flour, vanilla extract, and salt
Heat the mixture over medium heat, stirring constantly until it thickens, about 5-7 minutes
Remove from heat and let it cool slightly
