These Hungry Caterpillar Cookies are a fun addition to an Amazing Eric Carle birthday party. The vibrant colors and adorable caterpillar design will capture the imaginations and taste buds of the children

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Red, green, blue, and yellow gel food coloring
  • Black icing gel or edible black marker

Instructions:

In a bowl, whisk together the flour, baking powder, and salt

In a separate bowl, cream together the butter and sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

Divide the dough into four equal portions

Add a few drops of a different gel food coloring to each portion, kneading until the color is evenly distributed

Wrap each colored dough in plastic wrap and chill in the refrigerator for at least 1 hour

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

Take a small amount of each colored dough and roll them into thin ropes

Place the ropes side by side and gently press them together, then twist to create a colorful caterpillar pattern

Form the caterpillar shape on the prepared baking sheet

Bake for 10-12 minutes or until the edges are lightly golden

Remove from the oven and let the cookies cool on the baking sheet for a few minutes

Once the cookies are cool, use the black icing gel or edible black marker to add the caterpillars face and features

Let the icing set before serving
