Crock Pot Vegan Mashed Potatoes

Creamy and flavorful mashed potatoes made in a slow cooker, perfect for a vegan-friendly side dish.

Ingredients:

  • 5 pounds potatoes, peeled and diced
  • 1 cup vegetable broth
  • 1/2 cup unsweetened almond milk
  • 1/4 cup vegan butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish optional

Instructions:

Place the diced potatoes in the slow cooker

Add vegetable broth, almond milk, vegan butter, minced garlic, salt, and pepper to the slow cooker

Stir to combine ingredients

Cover and cook on low for 6-8 hours, or until potatoes are tender

Once potatoes are cooked, mash them using a potato masher or fork until desired consistency is reached

Taste and adjust seasoning if necessary

Garnish with chopped chives or parsley if desired before serving
