Jalapeno Beer Cheese Soup
A rich and flavorful soup with a spicy kick, blending the bold flavors of jalapenos, beer, and two types of cheese.
Ingredients:
- 1 cup diced jalapenos
- 1/2 cup diced onions
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 3 cloves minced garlic
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 4 cups chicken broth
- 2 cups beer preferably lager
- 3 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup half-and-half
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions:
Put garlic, jalapenos, onions, celery, carrots, and butter in a large pot
Cook the vegetables until they are soft
Add the flour and keep stirring for two to three minutes
Make sure there are no lumps as you slowly whisk in the chicken broth and beer
Turn down the heat and let the mixture simmer for a while
Mix in the Monterey Jack and cheddar cheeses until they melt and become smooth
Add the half-and-half and Dijon mustard and stir them in
Simmer for another 10 to 15 minutes
Add pepper and salt to taste
Serve hot with chopped cilantro on top
