15-Min Quinoa Slaw Bowl

This 15-minute quinoa slaw bowl is a colorful and nutritious meal packed with fiber, protein, and vitamins. Its a perfect blend of textures and flavors, from crunchy vegetables to nutty quinoa, all tossed in a savory sesame ginger dressing.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups shredded red cabbage
  • 1 large carrot, grated
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tablespoons sesame seeds
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon maple syrup
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions:

Cook quinoa according to package instructions

In a large bowl, combine cooked quinoa, shredded red cabbage, grated carrot, sliced red bell pepper, and chopped cilantro

In a small bowl, whisk together rice vinegar, soy sauce, maple syrup, toasted sesame oil, grated ginger, and minced garlic to make the dressing

Pour the dressing over the quinoa slaw mixture and toss to combine

Sprinkle sesame seeds on top before serving
