Stuffed Pork Loin
Ingredients:
- 1 pork loin approximately 2 lbs
- 1 cup breadcrumbs
- 1/2 cup chopped apples
- 1/2 cup chopped dried cranberries
- 1/4 cup chopped pecans
- 2 tablespoons chopped fresh sage
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Preheat the oven to 375F 190C
Butterfly the pork loin by making a lengthwise cut down the center, being careful not to cut all the way through
In a bowl, mix together breadcrumbs, chopped apples, dried cranberries, pecans, and fresh sage
Season with salt and pepper
Spread the stuffing mixture evenly over the butterflied pork loin
Carefully roll the pork loin, securing the stuffing inside
Tie the rolled loin with kitchen twine at 2-inch intervals
Rub the outside of the pork loin with olive oil and season with additional salt and pepper
Place the stuffed pork loin on a roasting pan and roast in the preheated oven for approximately 45-50 minutes or until the internal temperature reaches 145F 63C
Allow the stuffed pork loin to rest for 10 minutes before slicing
Serve slices of the stuffed pork loin with any remaining stuffing and your favorite sides
